I always try to keep BF happy with an overwhelming surplus of delicious treats. His roommates love/hate me for it.
Despite the boys whining about how I am going to make them chunky (better them than me, right?), I keep trying out new recipes on them.
{ Hurray for guinea pigs! }
After hearing BF casually mention his undying love for almond poppy seed bread, I was on a mission to create the best bread ever. Combining several different recipes and adding in my own substitutions, I have found it! BF said he almost ate the whole loaf within a half day time frame, so I figure it's a winner!
This bread is so fast and simple to make, and has that nice bakery style quality. Drenched in a delicious citrus glaze that crystallizes to lock in the bread's moisture, as well as add a delicious melt in your mouth topping.
{ Citrus Glazed Almond Poppy Bread }
Friend tested & BF approved!
Ingredients:
3 cups all-purpose flour
1 1/2 teaspoons salt
1 1/2 teaspoons baking powder
4 tablespoons poppy seeds
1 1/3 cups vegetable oil
3 eggs
1 1/2 cups milk
2 1/4 cups white sugar
1 1/2 teaspoons vanilla extract
2 teaspoons almond extract
Glaze:
3/4 cup powdered sugar
1/4 cup orange juice
1 teaspoon vanilla extract
1 teaspoon almond extract
Directions:
** Preheat oven to 350 degrees. **
1) Grease bottoms of two 9-inch loaf pans.
2) Mix together flour, salt, baking powder, poppy seeds, oil, eggs, milk, sugar, vanilla, and almond extract.
3) Pour into prepared pans. Bake at 350 degrees F (175 degrees C) for one hour. Cool 5 minutes. Poke holes in top of loaves and pour glaze over.
4) While bread is cooling for 5 minutes combine all of the glaze ingredients until smooth and pour over loaves covering bread completely.
5) Let glaze dry and bread cool. Slice and enjoy!

** This recipe is adaptable for muffins. Grease muffin tin, follow same directions, and bake for 30 minutes or until toothpick comes out clean. **
This bread is such a hit - you and your family will love it! It's so good that I am now contemplating making several loaves to slice up for my Christmas goodie platters that I deliver to family and friends!
