Skinny Greek Yogurt Chicken

For weeks now I have seen this recipe for "Melt in your mouth chicken", so when date night rolled around a few weeks ago I knew exactly what we needed to try!

I decided to sub the mayo for greek yogurt for a low-cal, healthier spin. This recipe was so extremely easy, convenient, and absolutely delicious. The greek yogurt locks in the moisture, and the spices just kick it up to a whole different level.

We were both huge fans... in fact I've made it two more times since then because it was so yummy! Paired with crunchy baked okra and roasted garlic brussel sprouts... oh yum! Super low in calories and high in protein, both your waistline and your hunky meat-and-potatoes kind of man will thank you!


{ Skinny Greek Yogurt Chicken }



Ingredients:

4 boneless/skinless chicken breasts
1 cup plain greek yogurt (Chobani 0%)
1/2 cup parmesan cheese - grated
1 teaspoon garlic powder
1 1/2 teaspoon seasoned salt
1/2 teaspoon pepper



Directions:


1) Preheat oven to 375 degrees.

2) Combine greek yogurt, parmesan cheese, garlic powder, seasoned salt, and pepper in a bowl.

3) Line baking sheet with foil and spray lightly with cooking spray.

4) Coat each chicken breast in greek yogurt mixture and place on foiled baking sheet.

5) Bake for 45 minutes.

6) If you would like to brown the top, turn the broiler on high for 3 minutes or so. Remove from oven once top is golden brown.

Yes, I told you, the world's easiest meal, and clean-up is even easier!

For all of us working women, this would be extremely easy to prep the night before. Then all you have to do at the end of a long day is preheat the oven and throw the chicken in! Voila - a healthy meal in less than an hour!

I promise you will love it. In fact, this leftover hater looked forward to lunch the next day - shocking!

  2. oh this looks divine! great idea to substitute the yogurt! and which recipe do you use for your sprouts? i'm trying to find one i like...i made them in the crock-pot on monday with dijon mustard and butter...an odd combo, but they were actually great. roasted garlic ones sound even better!

    I just made this and it tasted great, but it did not brown up AT ALL. I baked at 375 for 45 min. What did I do wrong??. I also recommend spraying the foil. It stuck horribly.

    2. Me too! I made it last night and was hoping for crispy yumminess. It tasted fine, but it wasn't brown at all. I even broiled it for about 5 mins too.

    I just made this with the Kraft Fresh Takes Italian Parmesan - so it already had seasonings along w/ bread crumbs to make it a little crunchier (and it browned up nice in the oven at 375). I was surprised that the Greek Yogurt still gave it some tanginess like I would think mayo would! Next time I might try this recipe since then I can control the amount of cheese & buy reduced fat cheese.

    Annonymous - Yes, it should bake into a nice crisp coating in the oven. It won't be super flaky, but it's enough to add deliciou texture!

    If you have problems, spritz the chicken with some olive oil cooking spray to make it brown and crunch better! :)

    And yes, spraying the foil is a must!

    *** PLEASE NOTE ***

    This chicken isn't going to get crispy like fried chicken! I've had lots of e-mails about it, and it is just supposed to get golden in color.

    If you would like an extra crunch, consider spraying it with olive oil sppray and placing it under the broiler for 1-2 minutes.

  19. I made this and my whole family loved it! Super simple and healthy, what's not to love? I used grated Parmesan (the kind you sprinkle on pasta) and it came out nice and lightly browned, with a nice layer of crispy goodness on top. Make this! It's a keeper!

As for the Karma's question, I finally just dredged the chicken in the yogurt mixture and then put in a casserole dish and topped the extra mixture on top of the chicken…so yummy! I can't wait to make it again!

  27. I'm making this for dinner tonight. I've mixed the topping together already to allow the flavours to mingle - oh my goodness, it is delicious! I actually just want to eat it on crackers right now as a dip! Hopefully it will be just as good on the chicken tonight :)

  29. Delish! Made this for dinner last night. Hubby LOVED it! For anyone who has wondered if you can use regular yogurt as a sub for Greek, you totally can. That's all I had in the fridge and it worked great. Will definitely be making this again.

  30. I have always made this with mayo & everyone in our house loves it. However, trying to eat healthier so I will try the greek yogurt. One thing I do as well is after coating in mayo or yogurt I cover in Italian bread crumbs & it is so yummy! Great over a big salad or with any flavor noodles!

  31. I made this the other night! So delicious! I did bring down the temp to 350, and turned the broiler on for the last couple of minutes. Wasn't too thrilled with the left overs, but the night of was definitely yummy!

  32. I add a little dill to the yogurt and after dipping the chicken in the yogurt mixture, I dip the chicken in plain panko mixed with lemon. Spray before putting in oven. Squeeze lemon juice when done.

  35. I made this tonight. Like one of the other posters, I discovered that the yogurt mixture was very runny and slid off of the chicken. However, despite this, the chicken had a very nice flavor and texture. I'd definitely make it again, but I'm not sure what to do about the runny coating.

  40. The second time i cooked this I screwed up and didn't read the part about putting it on foil and put or on a clear Pyrex pan. Be warned it doesn't brown doing this. :) I switched half way through and still had to use the broiler, and it was still delicious.

I was thinking of using full fat greek yoghurt as a substitute and wondered what it would turn out like. So thanks for letting us know it works well.   50. It's in the oven right now and looks like a terrible mess. The "coating" is melting and sliding off, there is moisture pooling around the chicken, and the chicken looks blah. Certainly hope the last 15 minutes of cooking transform it!

  52. When I made this, the chicken stayed white in color. I made it stay in longer and raised my oven rack and it just made it tougher. I must try this again with the spray of olive oil as meg suggested.

  54. The way to combat the problems with the crispyness is to use less yogurt and a little more cheese. I used an almost 6 oz container of yogurt and it didn't melt off like it has in the past.

  55. I made this tonight in a casserole dish b/c I didn't want to waste foil. It came out in a pool of liquid from the sauce, but I figured that might happen and knew my husband likes very moist meat compared to baked crisp anyhow; and it was INCREDIBLY delicious!! My husband was very happy and we'll be keeping this recipe for lots of use! :) Very simple, easy, and delicious!!! Thanks so much for sharing!!!

    I just made this for dinner and it was delicious - juicy, ternder. But I have my doubts about the picture - I cooked mine exactly as directed and it came out creamy white - no crust like in the picture. I ended up putting it under the broiler for a few minutes and it got a bit brown, but nothing like the picture. Suggestions?? Anyone try bread crumbs or panko?

    Depending on how much greek yogurt you use will determine how easily it is able to brown. I would recommend a thin layer of the seasoned greek yogurt mixture and some time under the broiler. Otherwise you could try spraying the tops with olive oil before broiling. I have also dunked the coated chicken in panko and spritzed with olive oil for a healthier baked fried chicken type feel! Try it out! :)
